New York Ice wines (or icewine; German Eiswein) are a type of dessert wine produced from grapes that have been frozen while still on the vine. The sugars and other dissolved solids do not freeze, but the water does, allowing a more concentrated grape must to be pressed from the frozen grapes, resulting in a smaller amount of more concentrated, very sweet wine. To be consider an ice wine, the harvest must come after the first frost and picked when the temperature is below 17.6 F and pressed when the grapes are still frozen before starting the fermentation process. Agness Wine Cellars produces Frozen Rose a red dessert wine from Finger Lakes DeChaunac grapes picked overnight while in a frozen condition.
